Yields 10 servings

For the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Drink (yields 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Method

For the Citrus Syrup: Place all the ingredients into a saucepan, heat until it reaches a light boil, stirring to dissolve. After that, remove from the stove allowing it to reach room temperature completely. Pour into an sealable bottle, cap it and refrigerate it in the refrigerator, it will last for about one month.

For the Premix: Combine the specified spirits and syrup in a big jug, allow it to infuse for one hour, then filter it best through cheesecloth, so it's fully clarified.

For serving: Measure 85ml from the premix into your mixing glass filled with ice, and agitate lightly for about 60 seconds to cool it down. Filter into an frosted cocktail glass or equivalent, decorate with some cranberries and complete it with a brief mist of mandarin oil over the top.
